摘要 苦荞麦富含蛋白质、维生素、矿物质、微量元素、膳食纤维以及黄酮类化合物等营养物质,是一种极具开发潜力的功能性食品原料。苦荞凉面在为数不多的苦荞产品中,受众面更广,具有广阔的发展前景。开发即食性苦荞凉面不仅能满足人们对功能保健食品的追求,还能顺应当今快速便捷的生活需求,对于助力凉山苦荞产业的发展与振兴,切实满足乡村振兴的要求有重要的意义。 Tartary buckwheat is rich in protein,vitamins,minerals,trace elements,dietary fiber,flavonoids and other nutrients.It is a functional food raw material with great development potential.Among the few tartary buckwheat products,tartary buckwheat cold noodles have a wider audience and broad development prospects.The development of ready-to-eat tartary buckwheat cold noodles can not only meet people’s pursuit of functional health food,but also meet today’s fast and convenient living needs.It is of great significance to help the development and revitalization of Liangshan tartary buckwheat industry and effectively meet the requirements of rural revitalization.
