摘要 当前人们对菜品的要求越来越高,人们除了关注菜品的味道以外,对于菜品的外观也有了更高的要求。在这种背景下,中餐菜品烹饪不得不进行创新,厨师要积极地寻求中餐烹饪中色彩与造型的创新,运用娴熟的技巧来制作出更加精美的菜品,使中餐菜品的色彩变得更加丰富,增强食客对菜品的食欲。本文分析了中餐烹饪的特点,探究了中餐烹饪中色彩和造型表现艺术的重要性以及中餐烹饪中色彩和造型的创新路径。 At present,people have more and more higher requirements for dishes.In addition to making people pay attention to the taste of dishes,they also have higher requirements for the appearance of dishes.In this context,Chinese dishes have to be innovated.Chefs should actively seek the innovation of color and modeling in Chinese cooking,and use skilled skills to produce more exquisite dishes,so that the color of Chinese dishes become more rich,enhance diners’appetite for dishes.This paper analyzes the characteristics of Chinese cuisine,and studies the importance of color and modeling expression art in Chinese cuisine,and the innovative path of color and modeling in Chinese cuisine.
