酒用分子筛介质净化白酒过程中金属元素的迁移研究

摘要 白酒生产中使用的分子筛介质是净化处理用的助剂,材质中含有一定量的金属元素。本研究对分子筛介质中的几种可能会严重影响白酒品质的金属元素As、Pb、Fe、Zn、Ca、Cu含量进行测定,以不同接触时间、不同介质使用比例进行白酒净化试验,研究分子筛介质在与白酒的接触过程中金属元素迁移到酒体中的情况,同时对比实际生产。试验结果表明,分子筛介质中Ca、Fe元素含量较高,在净化过程中Fe、Pb元素较为稳定,没有出现迁移现象,其他几种金属元素随着接触时间和介质量的增加而迁移量增加,但迁移量都在安全范围内,不会影响白酒的品质。 The molecular sieve is a kind of media for Baijiu purification,and it contains a certain amount of metallic elements,which might affect the quality of Baijiu.The contents of metallic elements in molecular sieve,including As,Pb,Fe,Zn,Ca,Cu,were mea-sured.Liquor purification tests were carried out with different contact time and molecular sieve dosage to study the transfer of metal-lic elements during the purification treatment.The result showed that the molecular sieve had high contents of Ca and Fe;during the purification treatment,Fe and Pb were stable,with no transfer,while the other metallic elements would transfer,and the transfer amount increased as the contact time and molecular sieve dosage increased.The transfer amount were all within the safety range,and would not affect the quality of Baijiu.
