摘要
地域气候差异和天气变化等环境因素均会影响大曲品质。目前传统的制曲方式多采用人工凭借个人经验控制大曲品质,受环境因素制约,导致大曲的品质不稳定;大曲制作周期受气候制约,冬季面临停产等问题,限制大曲质量和产量提升。影响大曲发酵的曲房环境因素主要包括温度和湿度。本文针对古井中高温大曲生产工艺特点设计了一款能够自动调温、调湿的智能化环控曲房。智能化环控曲房可自动记录生产过程的关键工艺参数,实现大曲生产过程控制的追溯总结。智能化环控曲房制曲结果表明该系统制曲与传统制曲结果相比,能够克服冬季低温对制曲生产的不利影响,显著提升大曲的品质。
Environmental factors such as regional climate differences and weather changes will affect the quality of Daqu.At present,the traditional way of making Daqu mainly relies on personal experience to control of the quality of Daqu,resulting in unstable quali-ty of Daqu.The production cycle of Daqu is restricted by the climate,and faces problems such as suspension of production in winter,which limits the quality and output of Daqu.The environmental factors affecting the fermentation of Daqu mainly include tempera-ture and humidity.In this paper,according to the production process characteristics of the medium-high-temperature Daqu,an intelli-gent environment control system that can automatically adjust the temperature and humidity of the Daqu workshop is designed.The intelligent environment control system can automatically record the key parameters of the production process,and can realize the ret-rospective summary of the Daqu production process control.The experimental results show that the intelligent environment control system can overcome the adverse effect of low temperature in winter and significantly improve the quality of Daqu.
