摘要
随着社会生活节奏的加快,传统手工淮扬菜在加工过程中出菜慢、加工效率低、人工成本高、品质稳定性差等方面的不足开始凸显。预制淮扬菜随着市场实际需求的增加而呈现快速增长的势头,预制淮扬菜工业化目前已成为行业的热点,其未来发展具有巨大的前景。基于此,本研究重点讨论了预制淮扬菜工业化的发展现状及最新趋势,并指出目前淮扬菜工业化生产过程中存在批量生产转换难度大、标准化程度低、集约化程度低等系列问题,提出完善行业标准、构建评价体系、改进传统设备、强化专业人才培养、突出绿色生产等解决对策,以期为未来预制淮扬菜工业化研究及应用发展提供一定的参考。
With the acceleration of the people’s pursuit of living efficiency,the shortcomings of the processing mode of traditional handmade Huaiyang cuisine,such as slow cooking,low efficiency,heavy labor and unstable quality,begin to highlight.Therefore,the industrialization of Huaiyang cuisine has become one of the important research topics in current cooking industry.With the increase of market demand,the industry of prepared Huaiyang cuisine shows a rapid growth momentum.As a hot spot in the industry,the industrialization of prepared cuisine has a huge research prospect in the future.This paper discussed the development status of Huaiyang cuisine industrialization and the latest trend of its development.In addition,the shortcomings and countermeasures were analyzed to provide a reference for the future research and application of Huaiyang cuisine industrialization.
