摘要
饮食作为最底层的生理需求之一,是人类社会开展一切物质和精神活动的重要基础。食物对特定地域的物质文明和精神文明有着极强的影响力,是重要的文化符号,也是文化可持续的重要研究内容。千百年来,京杭大运河联通了各地的商业经济,同时也肩负着“两京”之间粮食、商品、人员等的运输重任。大运河开通后,往来流通的各地食材极大地丰富了中国食品市场,促进了各地间的文化交流,更对中国饮食文化产生了深远影响。京杭大运河沿线的淮扬地区是国内较具代表性的运河文化区,文章以文献研究法为主,探讨京杭大运河开通后对中国饮食格局产生的影响,以及淮扬地区、淮扬饮食文化的发展与运河之间的关联性,结合相关史论研究,将体验设计的原则引入淮扬地区饮食设计的研究中,探索在当今体验经济时代的社会背景下,淮扬菜更多的发展可能性。
Food is the most basic physiological need of human beings and the basis for all activities carried out by human society,and it is also the premise and foundation for building spiritual civilization.Food has an extremely strong influence on the material and spiritual civilization of a specific region,and is an important cultural symbol and research content for cultural sustainability.For thousands of years,the Beijing-Hangzhou Grand Canal has connected the commercial economies of various regions,and has also been responsible for the transportation of food,goods and people between the two capitals.Since its opening,the Grand Canal has greatly enriched Chinese food market with ingredients from the whole country,promoted cultural exchanges between regions,and had a profound impact on Chinese food culture.The Huaiyang region along the Beijing-Hangzhou Grand Canal is a representative canal culture area in China.The article focuses on literature research to explore the impact of the opening of the Beijing-Hangzhou Grand Canal on Chinese food pattern,and the correlation between the Huaiyang region,the development of Huaiyang food culture.Exploring more possibilities for the development of Huaiyang cuisine in the context of the experience economy.
