蜡质玉米淀粉乙酰化的工艺研究

摘要 乙酰化淀粉是一种重要的酯化淀粉,因其亲水性强、糊化温度低、糊液的黏度稳定性相对较好、透明度高、抗凝沉性强,被广泛应用于高端食品、纺织和制药等领域。探讨蜡质玉米淀粉酯化过程中各因素对反应效果的影响,通过单因素分析,以取代度为目标函数,确定酯化剂加量、反应时间及温度,体系pH的最佳值,此条件下制备的乙酰化蜡质玉米淀粉,其乙酰基质量分数为3.95%,取代度为0.121%,其黏度、溶解度、糊液透明度及稳定性等物理特性均有较大程度提升。 Acetylated starch is an important esterified starch,because of its strong hydrophilicity,low gelatinization temperature,relatively good viscosity stability,high transparency,and strong anti retrogradation,it is widely used in high-end food,textile,pharmaceutical and other fields.The influence of various factors on the reaction effect in the esterification process of waxy corn starch was discussed.Through single factor analysis,the best values of esterification agent dosage,reaction time,temperature and system pH were determined with the degree of substitution as the objective function.The acetylated waxy corn starch prepared under this condition had 3.95%acetyl group content and 0.121%degree of substitution.Its viscosity,solubility,paste transparency and stability were greatly improved.
