电子鼻气敏传感器的工作原理及其在肉品掺假中的应用研究进展 被引量:1

摘要 电子鼻作为一种新型仿生嗅觉检测技术,具有检测时间短、样品预处理简单、检测结果可靠等优点,受到国内外学者的广泛关注。目前,市场上存在许多基于不同检测原理和机制的新型电子鼻传感器,其类型和阵列的差异与电子鼻的应用扩展密切相关。本文重点阐述电子鼻中金属氧化物型、导电聚合型、质量敏感型、场效应管型、光纤型等气敏传感器的工作原理,分析影响电子鼻检测结果的主要因素,并概述电子鼻在生鲜肉与肉制品掺假中的应用研究进展,以期为电子鼻的工业化推广和肉品掺假检测技术革新提供参考。 As a new bionic olfactory detection technology,the electronic nose has drawn the interest of researchers worldwide for its advantages such as short detection time,simple sample pretreatment,and reliable detection results.At present,there are many new electronic nose sensors based on different detection principles and mechanisms that are available in the market,and the differences in their types and arrays are closely related to the expansion of the application of electronic noses.This paper illuminates the working principles of gas-sensitive sensors used in electronic noses such as metal oxide-type,conductive polymer-type,mass-sensitive,field effect tube-type,and optical fiber-type,analyzes the main factors affecting the results of electronic nose,and summarizes the recent progress in the application of electronic nose technology in the detection of adulteration of fresh meat and meat products,aiming to provide a foundation for the industrial popularization of electronic nose technology and for innovations in meat adulteration detection technology.
