利用核桃木屑栽培平菇对子实体营养价值的影响

摘要 以平菇“冀杂26”为试验材料,研究核桃木屑栽培基质对平菇子实体中营养成分、矿物质元素、氨基酸组成及含量、蛋白质营养价值的影响,并分析基质营养成分含量与各指标的相关性。结果表明核桃木屑有利于提高子实体中蛋白质、钙、铁、苦味氨基酸的含量及呈味氨基酸总量;配方2栽培的平菇子实体氨基酸比值系数分(SRC)最高。基质中全氮、全镁含量与子实体中脂肪、粗多糖、粗纤维、镁、铜、锌、铁的含量正相关;基质中全钾含量与子实体中碳水化合物、灰分和维生素C含量正相关;基质中全锌含量与子实体中必需氨基酸、非必需氨基酸、总氨基酸、药用氨基酸、甜味氨基酸、鲜味氨基酸含量正相关;基质中有机碳含量与子实体中蛋白质、镁、铜、锌、铁含量及SRC正相关。 Pleurotus ostreatus‘Jiza 26’was used as the test material,studying the effects of walnut sawdust cultivation substrate on the nutrient composition,mineral elements,the contents and composition of amino acid and protein nutritive value evaluation of P.ostreatus fruit body,and analyzing the correlation between the nutrient contents of the substrate and various indicators of the fruit body.The results showed that the cultivation of P.ostreatus with walnut sawdust was beneficial to increase the content of protein,calcium,iron,bitter amino acid and the total content of delicious amino acid in the fruit body;the SRC of the P.ostreatus fruit body cultivated by formula 2 is the highest.The substrate contents of total nitrogen and total magnesium were positively correlated with the contents of the fat,crude polysaccharide,crude fiber,magnesium,copper,zinc,iron in the fruiting body;the substrate content of total potassium was positively correlated with the contents of carbohydrates,ash and vitamin C in the fruit body;the substrate content of total zinc was positively correlated with the contents of indispensable amino acids,non-indispensable amino acids,total amino acids,medicinal amino acids,sweet amino acids,and umami amino acids in fruit body;the substrate contents of organic carbon in the cultivation substrate were positively correlated with the contents of protein,magnesium,copper,zinc,iron and SRC in fruit body.
