工厂化栽培红托竹荪的营养成分测定及食用安全性评价 被引量:4

摘要 为明确工厂化栽培模式下红托竹荪的营养成分和食用安全性,根据相关检测标准,测定红托竹荪的主要营养成分、矿物质、维生素、重金属、有效活性成分、农残药残等的含量,并进行营养评价。结果表明,在工厂化栽培模式下,红托竹荪干品中蛋白质和膳食纤维的质量分数高达23.2%和40.75%,脂肪含量仅为1.12%,是一种低脂、富含蛋白质和膳食纤维的健康食品。矿物质和维生素种类多,含量高,钾元素和维生素C的含量分别达260 mg·100^(-1)·g^(-1)、117 mg·100^(-1)·g^(-1),且多酚、多糖和三萜的含量较高。重金属、农残等安全性指标均符合相关标准要求,食用安全性高。工厂化栽培的红托竹荪是一种具有较高的食用和保健价值的绿色安全食品。 The contents of main nutrients,mineral,vitamin,heavy metal,active components and pesticide residue of Dictyophora rubrovolvata which cultivated in industrial condition were analyzed and evaluated by using the China national standard methods.The results showed,D.rubrovolvata dried products were rich in dietary fiber while protein contents,dietary fiber content,crude fat were 23.2%,40.75%and 1.12% respectively.The contents and variety of mineral and vitamins are rich and uniform relatively while the contents of potassium and vitamin C were up high to 260 mg·100^(-1)·g^(-1) and 117 mg·100^(-1)·g^(-1) respectively.It was also showed that polyphenols,polysaccharides and triterpenoids were relatively abundant in D.rubrovolvata.The content level of heavy metals and pesticide residues were far below the safety control standard of national regulation,which possessed a high edible safety.It was indicated that D.rubrovolvata cultivated in industrializations was an ideal high-protein and low-fat food material,which has great potential in the development of functional foods.
