运输密度对团头鲂肌肉特性的影响 被引量:2

摘要 有水运输是实现团头鲂(Megalobrama amblycephala)跨地域调配的主要方式,运输密度是该方式的关键参数之一。本研究以团头鲂为原料,采用超高效液相色谱仪、质构仪、光学电镜等设备研究运输密度(鱼水质量比1∶1.0、1∶1.5、1∶2.0和1∶2.5)对团头鲂肌肉特性的影响,探寻在保证团头鲂品质情况下的最优运输密度。结果显示:随着运输密度的升高(1∶2.5~1∶1.0),鱼肌肉的pH和肌糖原呈现先降低后升高,乳酸逐渐增加,三磷酸腺苷、5′-二磷酸腺苷、5′-一磷酸腺苷含量无显著性变化。运输密度为1∶1.5时,鱼肌肉的白度值、剪切力、持水性最低,苦味物质(次黄嘌呤核苷、次黄嘌呤)总含量最高,细胞外间隙最大、破碎率最高。而当运输密度增加至1∶1.0时,鱼肌肉的白度值、剪切力、持水性有所升高、苦味物质总含量显著下降,肌肉细胞外间隙缩小、破碎率降低。综合肌肉品质和运输成本,鱼水比为1∶1.0是较适宜的运输密度。 Transportation with water is the leading way to achieve cross-territory deployment of Megalobrama amblycephala,and transportation density is one of the critical parameters of this method.Texture analyzer and optical electron microscopy were applied to explore the effect of transportation density(fish-water ratio 1∶1.0,1∶1.5,1∶2.0 and 1∶2.5)on the muscle characteristics of blunt snout bream in this study to find the optimal transportation density and ensure the quality of M.amblycephala,ultra-performance liquid chromatography.With the increase of transportation density(1∶2.5~1∶1.0),the pH and glycogen of fish muscle decreased first and then increased,lactic acid gradually increased,and the contents of ATP,ADP and AMP did not change significantly.At a transportation density of 1∶1.5,the fish muscle had the lowest whiteness value,shear force,water holding capacity,the highest content of bitter compounds(HxR,Hx),the largest extracellular distance and the highest fragmentation rate.When the transportation density increased to 1∶1.0,the whiteness value,shear force,and water-holding capacity of fish muscle increased,the total bitter substance content decreased significantly,and the extracellular distance of muscle shrank and the fragmentation rate decreased.The findings indicated that 1∶1.0 was the suitable transportation density for muscle quality and transportation costs.
