黑茶粉对秀山鸡生长性能、屠宰性能及肉品质的影响 被引量:2

摘要 为研究黑茶粉对秀山鸡生长性能、屠宰性能及肉品质的影响,试验将192只秀山鸡随机分为4组,分别饲喂添加0.0(对照组)、0.4%、0.8%和1.2%经超微粉碎的黑茶粉,饲养至48 d,统计生长性能,测定屠宰性能、免疫器官指数及肉品质。结果显示:日粮中添加黑茶粉对秀山鸡平均日增重(ADG)、平均日采食量(ADFI)、料重比(F/G)等生长性能无显著影响(P>0.05),对秀山鸡屠宰率、半净膛率、净膛率、腹脂率、胸腺指数、法氏囊指数、脾脏指数均无显著影响(P>0.05);日粮中添加不同水平的黑茶粉均提高了秀山鸡胸肌pH45 min,其中0.4%黑茶组公鸡、0.4%黑茶组母鸡和1.2%黑茶组公鸡分别提高了10.00%(P=0.059)、8.35%(P=0.098)、10.91%(P=0.057),对胸肌嫩度和滴水损失无显著影响(P>0.05)。综上,日粮中添加适量黑茶粉不影响秀山鸡生长性能、屠宰性能与免疫器官指数,但可提高胸肌pH45 min。 The effects of black tea powder on the growth performance,slaughter performance and meat quality of Xiushan chicken were studied through feeding experiments.A total of 192 Xiushan chickens were randomly divided into 4 groups,and were fed with 0.0(control group),0.4%,0.8%and 1.2%ultra-finely pulverized black tea powder respectively.After rearing for 48 days,the growth performance was counted and the slaughter performance,immune organ index and meat quality were determined.The results showed that the addition of black tea powder to the diet had no significant effect on the growth performance of Xiushan chickens such as average daily gain(ADG),average daily feed intake(ADFI),feed/gain ratio(F/G)(P>0.05).The addition of black tea powder in the diet had no significant effect on the dressed percentage,percentage of half-eviscerated yield with giblet,percentage of eviscerated yield,percentage of abdominal fat yield,thymus index,bursa of fabricius index and spleen index of Xiushan chickens(P>0.05).Adding different levels of black tea powder to the diet all increased pH45 min in the breast muscle of Xiushan chicken,among them cocks in 0.4%and 1.2%black tea group,hens in 0.4%black tea group increased by 10.00%(P=0.059),10.91%(P=0.057)and 8.35%(P=0.098)respectively,and had no significant effect on the tenderness and drip loss of breast muscle(P>0.05).The growth performance,dressed percentage and immune organ index of Xiushan chicken were not affected by adding proper amount of black tea powder in the diet,but the pH45 min of breast muscle was increased.
