7个彩色马铃薯品种抗氧化性研究 被引量:6

摘要 【目的】探究7个彩色马铃薯品种的抗氧化组分含量及抗氧化活性,筛选抗氧化性强的优质彩色马铃薯品种,为其进一步开发利用奠定基础。【方法】以7个彩色马铃薯品种(黑金刚、希森8号、红玫瑰2号、大牛角、剑川红、干巴洋芋、花心洋芋)为研究对象,首先采用紫外分光光度法测定其总花色苷、总黄酮、绿原酸、总酚、β-胡萝卜素等氧化组分含量及总还原力,并对其抗氧化组分含量与总还原力之间的相关性进行分析;然后在此基础上采用隶属函数分析了7个彩色马铃薯品种的抗氧化组分及总还原力的综合评分;最后测定7个彩色马铃薯品种花色苷和VC(对照)对1,1-二苯基-2-苦基肼(DPPH)、2,2-联氮-二(3-乙基-苯并噻唑-6-磺酸)二铵盐(ABTS)、超氧阴离子和羟自由基的清除率,并计算了半最大效应浓度(EC50)。【结果】不同彩色马铃薯品种的抗氧化组分含量存在不同程度的差异,其中黑金刚的花色苷和总黄酮含量最高,希森8号的总酚含量最高,红玫瑰2号的绿原酸含量最高,大牛角的β-胡萝卜素含量最高。不同彩色马铃薯品种的总还原力由强到弱的顺序为黑金刚>希森8号>红玫瑰2号>大牛角>剑川红>干巴洋芋>花心洋芋。同一彩色马铃薯品种不同抗氧化组分的含量也存在差异。相关性分析结果表明,花色苷含量与总黄酮含量,花色苷、总黄酮含量与总还原力,绿原酸、总黄酮含量与总酚含量均呈极显著正相关。抗氧化组分及总还原力的隶属函数分析结果表明,希森8号的综合评分最高,黑金刚、红玫瑰2号、大牛角、剑川红居中,花心洋芋和干巴洋芋的综合评分均较低。抗氧化活性测定结果显示,7个彩色马铃薯品种花色苷对DPPH、ABTS、超氧阴离子和羟自由基都有明显的清除能力,且其EC50值均小于VC。【结论】7个彩色马铃薯品种含有丰富的抗氧化组分及较高的总还原力和抗氧化活性,其中希森8号可作为优质的功能型彩色马铃薯品种开发,其他品种可根据不同优势开发不同特色产品。 【Objective】Contents and activities of antioxidants of seven pigmented potatoes varieties were studied and the varieties with strong antioxidation were selected to improve further development and utilization of pigmented potato resources.【Method】Seven pigmented potato varieties of‘Heijingang’,‘Xisen No.8’,‘Hongmeigui No.2’,‘Daniujiao’,‘Jianchuanhong’,‘Ganbayangyu’and‘Huaxinyangyu’were selected.Firstly,contents of total anthocyanins,total flavonoidsβ-Carotene,chlorogenic acid and total phenol and total reducing power were determined,and the correlation between antioxidant components and total reducing power was analyzed.Then,the comprehensive scores of antioxidant components and total reducing power of seven varieties were analyzed by membership function.Finally,the scavenging rates of anthocyanins and VC(control)to 1,1-diphenyl-2-picrylhydrazide(DPPH),2,2-diazo-bis(3-ethyl benzothiazole-6-sulfonic acid)diammonium salt(ABTS),superoxide anion and hydroxyl radical were determined,and the semi maximum effect concentration(EC50)was calculated.【Result】There were distinct differences in contents of antioxidant components in different varieties,among which total anthocyanin content(TAC)and total flavonoid content(TFC)of‘Heijingang’were the highest,total phenol content(TPC)of‘Xisen No.8’was the highest,chlorgogenic acid(CGA)content of‘Hongmeigui No.2’was the highest andβ-carotene content of‘Daniujiao’was the highest.The total reducing power was in decreasing order of‘Heijingang’>‘Xisen No.8’>‘Hongmeigui No.2’>‘Daniujiao’>‘Jianchuanhong’>‘Ganbayangyu’>‘Huaxinyangyu’.There were also differences in contents of antioxidant components in same varieties.The correlation analysis showed that there were significant positive correlations between TAC and TFC,between TFC,TAC and total reducing power,and between chlorgogenic acid,TFC and TPC.The membership function analysis on antioxidant components and total reducing power showed that‘Xisen No.8’had the highest comprehensive score,followed by‘Heijingang’,‘Hongmeigui No.2’,‘Daniujiao’and‘Jianchuanhong’,while‘Huaxinyangyu’and‘Ganbayangyu’had the lowest.The results of antioxidant activity showed that anthocyanins of seven varieties had strong scavenging capacity for DPPH,ABTS,superoxide anion and hydroxyl radical with EC50 values significantly lower than VC.【Conclusion】The seven tested pigmented potato varieties were rich in antioxidant components with high total reducing power and antioxidant activity.‘Xisen No.8’can be developed as a high quality functional colored potato variety,whileother varieties can be developed differently as characteristic products according to their advantages.
