南美白对虾质量安全与营养品质动态研究

Study on quality safety and nutritional quality of Penaeus vannamei

本研究对2015—2020年南美白对虾(Penaeus vannamei)质量安全与营养品质学科主要研究机构、文献、专利及标准发布等情况进行统计和分析。研究发现近年来南美白对虾在危害因子风险评估及营养品质评价与分等分级方面的研究较少。现阶段应加快构建南美白对虾质量安全与营养品质指标体系,制定质量安全与营养品质标准,加强南美白对虾研究体系建设。加快推进相关标准与国际接轨,提高南美白对虾国际竞争力,应加强南美白对虾相关标准的制修订,提升国际市场风险的主动防控能力。本研究明确了南美白对虾质量安全与营养品质学科研究现状、发展状况和趋势以及今后需重点关注的领域,为科研人员了解基础研究方向提供参考。

This study performed the statistics and analysis for main research institutions,literatures,patents and standards in the fields of quality,safety and nutritional quality of Penaeus vannamei from 2015 to 2020.It was found that there were few studies on hazard factor risk assessment and nutritional quality evaluation and grading of Penaeus vannamei in recent years.At present,the establishment of quality safety and nutritional quality index system of Penaeus vannamei should be accelerated,and the quality safety and nutritional quality standards should be set up to strengthen the research system construction of Penaeus vannamei.The relevant standards should be accelerated into line with international standards to improve the international competitiveness of Penaeus vannamei.It was necessary to strengthen the establishment and revision of relevant standards of Penaeus vannamei to improve the ability to proactively prevent and control international market risks.Both the research status,development status,trend of quality safety and nutritional quality of Penaeus vannamei and the fields that need to be paid attention to in the future were clarified in this study,which provided reference for researchers to understand the basic research direction.
