As a new type of iron supplement,peptide calcium chelate can meet the physiological needs of mineral deficient people and has high social value.The development and utilization of peptide can increase the added value of protein resources and has good economic value.In this paper,the preparation,separation and purification,structure characterization,bioavailability and activity of metal calcium chelating peptides are reviewed,which provides a reference for the extensive development of metal chelating peptides.
