摘要
1956年,中餐烹饪讲师李灵生在美国夏威夷出版了《中餐食谱》(Mary Sia's Chinese Cookbook),这是一部影响卓著的英文中餐食谱书,在中外饮食文化交流史上,在推进美国中餐认知方面具有重要意义。该书介绍了中餐文化、中餐构成以及中餐烹饪风格成因。迄今来看,学界鲜有人对李灵生其人其作进行研究,造成这部重要中餐书籍鲜为人知。该文考察了李灵生生平经历与中餐著述,从内容结构、行文风格、中餐文化理念方面研究了《中餐食谱》一书的对话式特征,这对于拓展美国社会对中餐认知的研究、了解以英文中餐食谱书为介质的中餐西渐谱系等具有一定学术价值。
Mary Li Sia,a Chinese cooking instructor,published Mary Sia’s Chinese Cookbook in Hawaii,USA in 1956.It is an influential English Chinese cook book which is of great significance in the history of food cultural exchanges between China and the US and in promoting the recognition of Chinese food in the US.This book introduces culture and composition of Chinese food and the causes of Chinese cooking style.So far,there has been little research on Mary Li Sia and her works,which makes this important Chinese cook book little known in the academic field.This paper examines Mary Li Sia's life experience and Chinese food writings,and studies the dialogic features of Mary Sia's Chinese Cookbook from the aspects of content structure,writing style,and Chinese food cultural concept,which has certain academic value for expanding the research of American society on Chinese food cognition,and understanding the Chinese food Western evolution genealogy based on English Chinese food cookbooks.
