摘要
豆芽在我国有着悠久的生产历史,具有很高的营养价值以及医疗保健功效,因此深受人们的喜爱。我国食品安全标准规定,在豆芽的生产过程中,禁止使用任何添加剂。本文就近年来“毒豆芽”事件的发生,阐述了在豆芽生产过程中加入植物生长激素及农药的作用和危害,分析了国内外对于植物生长激素及农药残留的研究现状,并提出相关建议。
Bean sprouts have a long history of production in China,with high nutritional value and medical and health effects,so they are deeply loved by people.China’s food safety standards stipulate that any additives are prohibited in the production of bean sprouts.Based on the occurrence of“toxic bean sprout”in recent years,this paper expounds the role and harm of adding plant growth hormone and pesticide in the production of bean sprout,analyzes the research status of plant growth hormone and pesticide residues at home and abroad,and puts forward relevant suggestions.
