β-葡寡糖的制备及其结构鉴定和生物活性研究进展

摘要 低聚糖是一种新型功能性糖原,在食品领域应用广泛。β-葡寡糖是一类由2~20个葡萄糖通过β-糖苷键连接而成的低聚糖,主要由葡聚糖经不同方法降解制备得到,因其分子量低、水溶性好、结构独特、吸收效率高等特点,在调节肠道菌群、增强免疫、抗肿瘤等方面表现出较好的生物活性,在食品、保健品和药品等领域具有广阔的应用前景。为促进β-葡寡糖的研究与开发,本文就近年有关β-葡寡糖的降解制备、分离纯化、结构表征方法及其生物活性方面的研究进行系统综述,以期为β-葡寡糖的深度研究与利用提供一定的参考。 Oligosaccharide is a new type of functional glycogen and widely used in the food field.β-glucooligosaccharides are kinds of oligosaccharides composed of 2~20 glucoses connected byβ-glycosidic bonds,which are mainly prepared by the degradation fromβ-glucans with different methods.β-glucooligosaccharides possess characteristics of low molecular weight,good water solubility,unique structure and high absorption efficiency,resulting in many biological activities such as regulating intestinal flora,enhancing immunity and anti-tumor,etc.Therefore,they have a broad application prospect in food,health products,medicine and other fields.In order to promote the research and development ofβ-glucooligosaccharides,this paper reviews the recent studies on the degradation preparation,separation and purification,structural characterization and biological activity ofβ-glucooligosaccharides,which is expected to provide references for the further research and utilization ofβ-glucooligosaccharides.
