青贮饲料桑对湖羊生长性能、屠宰性能及背最长肌中氨基酸、脂肪酸含量的影响 被引量:7

Effect of silage mulberry on growth performance,slaughter performance,amino acid and fatty acid content of longissimus dorsi muscle of Hu sheep

摘要 试验旨在研究青贮饲料桑对湖羊生长性能、屠宰性能及背最长肌氨基酸、脂肪酸含量的影响。选取胎次、出生日期、体重相近的健康公湖羊24只,随机分成2组,每组3个重复,每个重复4只湖羊。C组(对照组)湖羊饲喂50%花生秧+50%精料,F组湖羊饲喂40%花生秧+10%青贮饲料桑+50%精料。试验期60 d。结果显示,与对照组相比,F组湖羊的平均日增重极显著提高(P<0.01),料重比极显著降低(P<0.01),酮体重、屠宰率、净肉重、净肉率、眼肌面积显著或极显著提高(P<0.05或P<0.01)。与对照组相比,F组湖羊背最长肌的pH_(45 min)值、pH_(24 h)值、肌肉a_(45 min)值、肌肉a24 h值均显著或极显著升高(P<0.05或P<0.01)。F组湖羊背最长肌中氨基酸总量、鲜味氨基酸、甜味氨基酸、必需氨基酸含量极显著提高(P<0.01)。F组的背最长肌中十七碳烯酸、油酸、α-亚麻酸、单不饱和脂肪酸、不饱和脂肪酸的含量显著或极显著升高(P<0.05或P<0.01);豆蔻油酸、十五碳酸、棕榈酸、十七碳酸、硬脂酸和饱和脂肪酸的总量显著或极显著降低(P<0.05或P<0.01)。研究表明,日粮中添加10%青贮饲料桑代替花生秧作为粗饲料可以提高湖羊生长性能、屠宰性能,优化了湖羊肌肉中的氨基酸和脂肪酸组成,改善了羊肉品质和营养成分。 The experiment was conducted to study the silage mulberry on growth performance,slaughter performance,amino acid and fatty acid content of longissimus dorsi muscle of Hu sheep.A total of 24 healthy male Hu sheep with similar birth date,parity and weight were randomly divided into two groups,with three replicates in each group and four sheep in each replicate.The sheep in control group were fed with 50%peanut vine+50%concentrate diet,the sheep in F group were fed with 40%peanut vine+10%silage mulberry+50%concentrate diet.The feeding trial lasted for 60 d.The results showed that compared with control group,the average daily gain of sheep in F group was extremely increased(P<0.01),feed to gain ratio was extremely reduced(P<0.01),carcass weight,slaughter rate,net meat weight,meat percentage and eye muscle area were significantly or extremely increased(P<0.05 or P<0.01).Compared with control group,the pH_(45 min),pH_(24h),a_(45 min) and a24h of meat in F group were significantly or extremely increased(P<0.05 or P<0.01).The content of total amino acids,fresh amino acids,sweet amino acids and essential amino acids in longissimus dorsi muscle in F group were extremely increased(P<0.01).The content of heptadecenoic acid,oleic acid,α-linolenic acid,monounsaturated fatty acid and unsaturated fatty acid in longissimus dorsi muscle of F group were significantly or extremely increased(P<0.05 or P<0.01).The total content of carmyoleic acid,pentacarbonate,palmitic acid,heptadacarbonate,stearic acid and saturated fatty acid were significantly or extremely decreased(P<0.05 or P<0.01).The experiment indicates that the addition of 10%silage mulberrycan improve the growth performance,slaughter performance, optimize the composition of amino acidand fatty acid in muscle of Hu sheep and improve thenutritional value of muscle.
