摘要
松茸多糖是松茸的主要活性成分,对其提取和纯化方法、结构等方面进行了总结,同时对松茸中所含蛋白质和氨基酸、挥发性物质等多种活性成分进行了综述,为松茸的开发利用和研究方向提供参考。
Polysaccharides are an important kind of active substances in Tricholoma matsutake.The extraction,purification methods and structure thereof were summarized.The proteins,amino acids,volatile substances,and the other active components contained in Tricholoma matsutake were also reviewed.This review may provide reference for the development and utilization of Tricholoma matsutake.
