摘要 应用现代化生产设备,开发及优化红曲米培养工艺,成功实现红曲米的自动化培养,创新了红曲制曲行业自动化生产模式。应用单因素试验及响应面试验探索红曲米自动化培养最优工艺,结果表明,自动化培养红曲米最佳生产工艺条件为:红曲霉接种量0.9%,加酸量1.7%,培养时间78 h。在此条件下培养红曲米色价可达1032.8μ/g。 The automatic cultivation process of Monascus rice was developed by applying modern production equipment.The auto-matic cultivation conditions were optimized by single factor experiments and response surface method.The optimal cultivation condi-tions were as follows:the inoculation amount of Monascus was 0.9%,the addition amount of acetic acid was 1.7%,and the cultiva-tion time was 78 h.Under the above conditions,the color value of the produced Monascus rice was 1032.8μ/g.
