原榨刺梨汁的成分分析及精制刺梨液解酒益肝功能探究

Components Analysis of Raw Rosa Roxburghii Tratt Fruit Juice and Hepatoprotective Effect Evaluation of Refined Rosa Roxburghii Tratt Fruit Juice

新鲜刺梨以及以其作为原料的产品在中国越来越受到欢迎,因为它们含有大量的生物活性成分。然而,很少有研究工业化产品原榨刺梨汁及精制刺梨液的功能。此研究中,通过压榨、膜浓缩、超高温杀菌等工艺获得原榨刺梨汁,并把原榨刺梨汁作为原料,制成工业化产品——精制刺梨液。此研究首先采用LC-MS/MS技术对原榨刺梨汁中的化合物进行了鉴定,发现其富含有机酸、酚类和黄酮类化合物。其次,通过测定原榨刺梨汁自由基清除能力及661W细胞抗氧化实验,发现其具有强大的体外抗氧化能力。最后,在建立的长期酗酒小鼠模型和急性醉酒大鼠模型中,精制刺梨液表现出解酒益肝的功能。这些发现表明精制刺梨液是一种非常有前景的功能性食品。

Fresh fruits of Rosa Roxburghii Tratt(RR)are increasingly popular in China,as they contain high amounts of bioactive constituents.However,there is few studies that investigated the functional benefits of its industrial product-raw RR fruit juice and refined RR fruit juice.In this study,after squeezing,membrane concentration,and ultrahigh temperature sterilization,raw RR fruit juice was obtained.Raw RR fruit juice was used as raw material to manufacture industrialized product refined RR fruit juice.The compounds of raw RR fruit juice were identified by liquid chromatography tandem-mass spectrometry(LC-MS/MS).It was rich in organic acids,phenols and flavonoids.In addition,by evaluating the free radical scavenging ability and preforming the antioxidant experiment of 661W cells of raw RR fruit juice,it was found that it has a strong antioxidant ability.Finally,in a mouse model of long-term alcoholism and a rat model of acute intoxication,refined RR fruit juice showed the hepatoprotective effect.These findings suggest that refined RR fruit juice is a very promising functional food.
