基于网络销售的调味面制品中食品添加剂现状调查 被引量:1

A Survey on the Status of Food Additives in Seasoned Pasta Products Based on Online Sales

摘要 以公众视角,采用国家标准方法对网络销售的调味面制品中9种食品添加剂使用情况进行调查,为进一步了解产品质量安全风险提供数据支持,从而有针对性地对市场监管和生产企业提供建议。对网络销售的215批次调味面制品进行随机抽样,并采用国家标准方法测定苯甲酸、山梨酸、脱氢乙酸等9种食品添加剂。结果表明,调味面制品中食品添加剂问题发现率为18.14%。防腐剂中脱氢乙酸问题发现率最高,甜味剂中三氯蔗糖检出率最高。苯甲酸、丙酸、乙酰磺胺酸钾、柠檬黄和日落黄的地区间差异有统计学意义(H=105.993, P<0.001);山梨酸的地区间差异有统计学意义(H=42.00, P<0.001);脱氢乙酸的地区间差异有统计学意义(H=15.069, P=0.035);丙酸的地区间差异有统计学意义(H=105.993, P<0.001);环己基氨基磺酸钠地区间差异有统计学意义(H=50.672, P<0.001);三氯蔗糖的地区间差异无统计学意义(H=10.525, P=0.161)。应进一步加强食品添加剂相关法律法规和知识培训,提高企业主体责任意识。同时,网络销售食品作为新兴业态,需不断完善网络食品交易相关法律法规,严格规范网络食品交易的准入程序,市场监管部门需创新监管模式,完善新业态监管模式和监管制度,加强对食品添加剂的监管,引导产业良性发展。 The use of nine food additives in seasoned pasta products sold on the Internet from a public perspective using national standard methods was investigated,to provide data support for further understanding of product quality and safety risks,so as to provide targeted advice to market supervision and manufacturers.A total of 215 batches of seasoned flour products sold online were randomly sampled,and 9 kinds of food additives such as benzoic acid,sorbic acid and dehydroacetic acid were determined by national standard methods.The results showed that seasoned pasta products in food additives found in the rate of 18.14%.The highest detection rate of dehydroacetic acid in preservatives and sucralose in sweeteners was found.Significant differences were found among benzoic acid,propionic acid,potassium acetosulfonate,lemon yellow and sunset yellow(H-105.993,P<0.001).There was significant difference in the interregional of sorbic acid(H=42.00,P<0.001)and dehydroacetic acid(H-15.069,P=0.035).Also,the difference of propionic acid(H-105.993,P<0.001)and sodium cyclamate(H-50.672,P<0.001)between regions was significant.In contrast,the regional difference of sucralose was not statistically significant.(H=10.525,P-0.161).Further strengthen food additive-related laws and regulations and knowledge training to improve the awareness of the main responsibility of enterprises.At the same time,the network sales of food as an emerging industry,it was necessary to continuously improve the network food trading-related laws and regulations,to strict regulation of network food trading access procedures,to market supervision departments need to innovate the regulatory model,to improve the new mode of supervision and regulatory system,to strengthen the supervision of food additives,and to guide the benign development of the industry.
