摘要
真菌毒素广泛存在于粮食中,属于粮食安全领域的重要症结性问题,由于真菌毒素源于真菌次生代谢产物,以及致畸、致癌、致突变等风险,尤其是受污染的粮食引发的健康问题,加剧了社会对粮食安全问题的关切。采取真菌毒素检测技术,有益于实现粮食的实时监测,及时规避潜在的粮食安全风险,本文以真菌毒素的快速检测技术为主,通过酶联免疫法、液相色谱法、气相色谱法和免疫胶体金等方法展开综述,分析现阶段的研究进展情况,并结合该领域的发展特征,探讨新型生物材料及检测元件的应用。
Mycotoxins are widely found in food products,which is an important crux problem in the field of food security.Because mycotoxins are derived from secondary metabolites of fungi,as well as teratogenic,carcinogenic,mutagenic and other risks,especially the health problems caused by contaminated food products,the social concern about food security has been intensified.Adopting mycotoxin detection technology is beneficial to realize real-time monitoring of food products and avoid potential food security risks in time.This paper focuses on the rapid detection technology of mycotoxin,and summarizes the research progress at this stage by means of enzyme-linked immunosorbent assay,liquid chromatography,gas chromatography and immunocolloidal gold,and discusses the application of new biological materials and detection elements in combination with the development characteristics of this field.
