树莓甜菜根羊奶咀嚼片的产品研发及工艺探究

摘要 为开发一款营养价值高的功能性乳制品,本文以树莓粉、甜菜根粉和羊奶粉为主要原料,采用干法压片工艺研制树莓甜菜根羊奶咀嚼片,优化原料粉碎目数和咀嚼片的产品配方,并经泡罩吸塑包装后,于特定环境下采用ASLT恒温加速破坏法,预测树莓甜菜根羊奶咀嚼片在室温储存温度下的保质期,测定产品营养成分。结果表明,原料最佳粒度为200目,压片设备片剂厚度为2.3 cm;树莓甜菜根羊奶咀嚼片最佳配方为甜菜根25%、树莓粉25%、羊奶粉牛奶粉比例为1:1(添加量均为20%)、硬脂酸镁2%、麦芽糊精4%,产品色泽呈淡红色且较为均匀,边缘光滑发亮,口感酸甜适中;预测泡罩包装成品在25℃、相对湿度65%的商业贮藏条件下保质期为192 d;制得的树莓甜菜根羊奶咀嚼片营养丰富且全面,具有较高的营养价值。 In order to develop a functional dairy product with high nutritional value,raspberry beet root goat milk chewable tablets were prepared by dry tabletting process with raspberry powder,beet root powder and goat milk powder as the main raw materials.The number of crushed raw materials and the product formula were optimized.After blister packaging,the shelf life of raspberry beet root goat milk chewable tablets at room temperature was predicted by accelerated shelf life tests(ASLT)in a specific environment,and the nutritional components of the products were determined.The results showed that the optimum particle size of raw materials was 200 mesh,and the tablet thickness was 2.3 cm.The best formula was beet root 25%,raspberry powder 25%,goat milk powder and milk powder ratio of 1∶1(all 20%),magnesium stearate 2%and maltodextrin 4%.The product was light red and uniform in color,smooth and shiny in edge and moderate in sour and sweet taste.It was predicted that the shelf life of blister packaging products would be 192 d,under the commercial storage conditions of 25℃and 65%relative humidity.The raspberry beet root goat milk chewable tablet had rich and comprehensive nutritional content and high nutritional value.
