清香型白酒风味成分对小鼠乙醇代谢及关键酶活性影响

摘要 选取产自山西、重庆、云南的清香型白酒样品(编号为SX、CQ和YN),分别灌胃小鼠相同浓度乙醇、白酒、高醇白酒、高酯白酒,测定小鼠的行为指标、血液中乙醇、乙醛质量浓度以及肝脏中乙醇脱氢酶(ADH)和乙醛脱氢酶(ALDH)活性。结果表明,增加3种酒样中醇类物质的浓度会对小鼠的平衡、运动能力造成严重的影响;小鼠血液乙醇、乙醛质量浓度分别为5 257~10 656 mg/L、30~69 mg/L;与同浓度的乙醇溶液相比,3种清香型酒样能促进ADH活性,在乙醇体积分数为50%的YN酒样中加入正戊醇、乙酸乙酯、丁酸乙酯和戊酸乙酯对ADH活性有显著的促进作用(P<0.05);CQ酒样中高浓度的正戊醇、乙酸乙酯、戊酸乙酯能降低ALDH活性。 Three kinds of light-flavor(Qingxiangxing)Baijiu samples(SX,CQ and YN)from Shanxi,Chongqing and Yunnan were selected,and the mice were gavaged with ethanol,Baijiu,higher-alcohols Baijiu and higher-esters Baijiu with same concentration.Then the behavior indicators of mice,the content of ethanol and acetaldehyde in blood,and the activity of alcohol dehydrogenase(ADH)and acetaldehyde dehydrogenase(ALDH)in liver were measured.The results showed that increasing alcohol concentration in Baijiu caused severe effects on the balance and exercise ability of mice.The contents of ethanol and acetaldehyde in the blood of mice were 5257-10656 mg/L and 30-69 mg/L,respectively.Compared with ethanol of the same concentration,3 light-flavor Baijiu samples promoted ADH activity,and the addition of n-pentanol,ethyl acetate,ethyl butyrate and ethyl valerate to YN sample with ethanol volume fraction of 50%enhanced its promotion effect(P<0.05).High concentration of n-amyl alcohol,ethyl acetate and ethyl valerate in CQ sample could reduce the activity of ALDH.
