一起农村自办宴席副溶血性弧菌性食物中毒的流行病学调查

Epidemiological investigation of a food poisoning caused by Vibrio parahaemolyticus in a rural self-organized group banquet

目的 查明一起农村自办宴席副溶血性弧菌性食物中毒事件的可疑食品、致病因子和危险因素等,提出防控措施和建议。方法 通过描述性流行病学和分析性流行病学等方法进行数据分析。结果 共搜索病例42例,临床症状以腹泻(100.00%)、腹痛(83.33%)为主;发病平均潜伏期19.0 h(5.0 h-40.0 h);病例对照分析结果显示,墨鱼条(OR=3.541,95%CI:1.235-10.152)和上汤海蜇(OR=3.855,95%CI:1.150-12.920)为本次事件的可疑中毒食品。实验室检测结果显示,1名厨师、7例病例肛拭子和1份使用后的餐具涂抹液中检出同一生物特性的副溶血性弧菌。结论 本次事件因某村自办宴席提供的被副溶血性弧菌污染的食物引起的细菌性食物中毒,可疑食品为墨鱼条和上汤海蜇,中毒原因存在多个污染或交叉污染环节,建议加强农村自办群体性宴席的食品安全管理,避免类似食源性疾病的发生。

Objective To investigate suspected food, pathogen and risk factors of a food poisoning caused by Vibrio parahaemolyticus in a rural self-organized group banque, and put forward the relevant prevention and control measures and suggestions.Methods Descriptive and analytical epidemiology were used to analyze the data.Results A total of 42 cases were collected, and the clinical symptoms were mainly diarrhea(100.00%) and abdominal pain(83.33%).The average incubation period was 19.0 hours(5.0 hours-40.0 hours).The results of case control analysis showed that the cuttlefish sticks(OR=3.541,95%CI:1.235-10.152) and soup jellyfish(OR=3.855,95%CI:1.150-12.920)were suspicious food.The results of laboratory tests showed that Vibrio parahaemolyticus of the same biological nature was detected in anal swabs from one cook, seven case swabs, and one post-use tableware smears.Conclusion The incident is caused by bacterial food poisoning caused by food contaminated by Vibrio parahaemolyticus provided by a rural self-organized group banque, suspicious food for cuttlefish sticks and soup jellyfish.This food poisoning event is caused by multiple contamination or cross-contamination.It is suggested to strengthen the food safety management of rural self-organized group banquets to avoid the occurrence of similar foodborne diseases.
