细胞支架与组织成型技术在细胞培养肉中的应用

摘要 细胞培养肉技术是近年发展起来的一项新型食品生物合成技术,它不需要经过动物养殖,而是通过体外培养动物细胞生产肉类。与传统养殖方式相比,细胞培养肉技术在环境资源保护、公共健康、动物福利等方面表现出较大优势。本文总结了培养肉的生产技术方案,重点探讨了细胞支架在培养肉中的应用及最新的组织成型技术,旨在为培养肉的支架选择和组织成型研究提供参考。 Cultured meat technology is a new type of food synthesis biotechnology that has emerged in recent years.Cultured meat is the use of animal cell culture in vitro to produce edible meat,instead of cultivation.Compared with traditional farming methods,cultured meat technology shows greater advantages in environmental and resource protection,public health,and animal welfare.In this work,we summarize production process of cultured meat and focuses on the development of cell biological scaffolds and tissue formation of cell cultured meats.This paper will provide reference for the choice of scaffolds and tissue formation of cultured meat.
