水苏糖在食品工业中的应用 被引量:1

摘要 水苏糖是自然界中存在的功能性低聚四糖,属于α-低聚半乳糖,是一种天然的双歧因子。水苏糖作为一种新型的功能性食品原料,其生理功效和开发应用日益受到重视。首先对水苏糖的调节肠道微生态菌群、预防肠道黏膜损伤、缓解便秘、调节免疫功能等生理功能做简单概述,然后对水苏糖在乳制品、面制品、果蔬加工以及保健食品中的应用展开探讨,以期为水苏糖在食品工业中的深度开发利用提供参考。 Stachyose is a functional tetra-oligosaccharide existing in nature,which belongs toα-galactose-oligosaccharide and is a natural bifidus factor.As a new type of functional food raw material,stachyose has been paid more and more attention to its physiological efficacy,development and application.The physiological functions of stachyose in regulating intestinal microflora,preventing intestinal mucosal injury,relieving constipation and regulating immune function are briefly summarized.Moreover,its application in dairy products,noodle products,fruit and vegetable processing,and functional food was analyzed and proposed,in order to provide valuable data for the utilization of stachyose.
