大肠埃希菌污染后3种材质砧板不同清洁方式清洁效果对比

Comparison of Cleaning Effects of Three Different Cleaning Methods on Cutting Boards Made of Escherichia Coli Contaminated Materials

摘要 本文研究了大肠杆菌污染后不同材质砧板不同清洁方式的清洁效果。选定木质、塑料、竹质3种常用材质砧板,模拟家庭厨房食品制备过程,采用调查所得干擦、湿擦、洗洁精、50℃热水4种常用清洁方式,调查分析受大肠杆菌污染的不同材质砧板不同清洁方式清洁率,使用方差分析比较各组清洁效果的差异。同一大肠杆菌污染状态下,相同材质砧板不同清洁方式清洁率对比差异具有统计学意义(P<0.05),其中湿擦与洗洁精无显著性差异(P>0.05),总体趋势为:50℃热水>洗洁精=湿擦>干擦。相同清洁方式不同材质砧板清洁率比较有显著性差异(P<0.05),总体趋势为:竹质砧板>木质砧板>塑料砧板。50℃热水清洁效果显著优于其他3种清洁方式,竹制砧板比另外2种材质砧板大肠杆菌更容易清洁。 This paper studied the cleaning effects of different cleaning methods for cutting boards made of different materials after escherichia coli contamination.Three commonly used cutting boards made of wood,plastic and bamboo were selected to simulate the food preparation process in the home kitchen.Four commonly used cleaning methods,namely,dry scrubbing,wet scrubbing,detergent and 50℃hot water,were used to investigate and analyze the cleaning rates of different cutting boards made of different materials contaminated by escherichia coli in different cleaning methods.Variance analysis was used to compare the cleaning effects of each group.Under the same escherichia coli pollution condition,there was a statistically significant difference in the cleaning rate of different cleaning methods for cutting boards of the same material(P<0.05),of which there was no significant difference between wet scrubbing and detergent(P>0.05).The overall trend was:50℃hot water>detergent=wet scrubbing>dry scrubbing.There is a significant difference in the cleaning rate of cutting boards made of different materials with the same cleaning method(P<0.05),and the overall trend is:bamboo cutting boards>wooden cutting boards>plastic cutting boards.The cleaning effect of 50℃hot water is significantly better than the other three cleaning methods,and the bamboo cutting board is easier to clean than the other two cutting boards.
