西兰花中萝卜硫苷提取及抗氧化性研究 被引量:2

摘要 目的 应用响应面法优化西兰花蔬菜干提取工艺,同时对水提液的抗氧化能力进行研究。方法 以萝卜硫苷为指标比较提取时间、温度、次数、加水量的单因素条件,再采取Box-Behnken组合法设计试验进行响应面分析;同时研究西兰花蔬菜干水提液的抗氧化能力。结果 最佳水提取工艺为加水25倍,温度66℃,提取29min,提取1次,验证得到萝卜硫苷含量为3.60mg·g^(-1)。水提液分别对Fe^(3+)具有还原能力,对ABST^(+)自由基、DPPH自由基均有清除能力。结论 采取Box-Behnken组合法布设试验方法较合理;西兰花干水提液的抗氧化活性与还原能力均较强。 OBJECTIVE To optimize the dry extraction process of broccoli vegetables by response surface methodology,and to study the antioxidant capacity of the aqueous extract;METHODS The single factor conditions of extraction time,temperature,frequency,and water addition were compared,and then the Box-Behnken combined method was used to conduct response surface analysis.At the same time,the antioxidant activity of broccoli vegetable dry water extract was studied;RESULTS The optimal water extraction process is adding water 25 times,extracting at 66℃for 29 min,and extracting once,and the content of glucoraphanin is verified to be 3.60mg·g~(-1).The water extracts have reducing ability to Fe~(3+)and scavenging ability to ABST~+free radical and DPPH free radical respectively.CONCLUSION The Box-Behnken combination method is more reasonable to set up the test method;the method for determination of glucoraphanin content is reliable and easy to operate;the antioxidant activity and reducing ability of the dry water extract of broccoli are strong.
