摘要
纤维素是自然界中含量最为丰富的天然高聚物,因其可再生、可降解等优良特性被广泛应用于不同领域。文章概述了纳米纤维素的种类,包括纤维素纳米晶、纤维素纳米丝、球形纳米纤维素、纤维素纳米片;同时对国内外在纳米纤维素的制备方法和工艺流程方面的文献进行了汇总与例举;并重点介绍了纳米纤维素在食品领域中的广泛应用,包括食品包装材料、乳液稳定剂、功能性食品成分、3D打印技术等用途,以此为纳米纤维素的开发与利用提供参考。
Cellulose is the most abundant natural polymer in nature and is widely used in different fields because of its excellent properties such as renewable and degradable.This paper summarized the types of nanocellulose:including cellulose nanocrystals,cellulose nanofibril,spherical nanocellulose,and cellulose nanosheets.It also summarized and exemplified the preparation methods and processes of nanocellulose at home and abroad,and highlights the wide range of applications of nanocellulose in the food industry,including food packaging materials,emulsion stabilizers,functional food ingredients,3D printing technology,etc.,in order to provide reference for the development and utilization of nanocellulose by researchers.
