摘要
茶多酚是茶叶中提取的一大类生物活性物质,具有抑菌、抗氧化、抗病毒、免疫调节和调节血脂等生物活性。茶多酚近年来在水产品保鲜中得到关注,广泛应用于食品保鲜中。文章主要介绍了茶多酚的组成、抑菌机制及近几年在水产品保鲜中的应用研究,为茶多酚在水产品保鲜应用中提供理论参考。
Tea polyphenols are a kind of biologically active substances extracted from tea.They had biological activities such as antibacterial,antioxidant,antiviral,immune regulation and blood lipid regulation.In recent years,they had attracted attention in the preservation of aquatic products and are widely used in food preservation.This paper introduced the composition,antibacterial mechanism of tea polyphenols,and the research progress in the preservation application of aquatic products,and provides a theory reference for preservation on application in aquatic products and foods.
