摘要
高压食品技术为食品安全和食品卫生作出了突出贡献。对于营养丰富的产品来说,其很有可能成为许多微生物寄生的培养皿。在食品原料的制作以及存放过程中,大量微生物通常会产生各种酶。食物变质的主要原因便是在各种酶的作用下,食品发生分解,进而发生变质和腐烂。因此,高压食品技术的广泛使用使这一现状得到明显改善。
High-pressure food technology has made outstanding contributions to food safety and food hygiene.For nutrient rich products,it is likely to become a petri dish for many microorganisms.During the production and storage of food raw materials,various enzymes are generally produced by a large number of microorganisms.The main reason for food spoilage is that under the action of various enzymes,food will decompose,and then deteriorate and decay.Therefore,the widespread use of high-pressure food technology has significantly improved this situation.
