摘要
全氟化合物(PFCs)具有良好的疏水疏油性、热稳定性和化学稳定性等性能,被用作生产保鲜膜、食品包装表面的防水防油涂层以及不粘锅炊具涂层等。随着分析技术的进步,人们认识到食品接触材料中的PFCs可能会污染与其接触的食品,并迁移到食品中,从而进入人体。然而,PFCs非常稳定,难以被新陈代谢、生物降解,同时具有持久性、蓄积性和远距离迁移等特性,导致其可在食物链中累积放大,并在生物体内富集,从而对人体健康造成危害。本文对近年国内外关于食品接触材料中PFCs的前处理方法和检测技术进行了归纳汇总,为国内研究食品接触材料中的PFCs的检测技术、风险评估/以及标准制修订提供了一定的参考。
Perfluorinated compounds(PFCs)are used in the production of plastic wrap,waterproof and oil-proof coatings on food packaging surfaces,and non-stick cookware coatings due to their excellent hydrophobic and oil-repellent properties,thermal stability and chemical stability.Accompanying with progress of analytical techniques,it has been recognized that PFCs in food contact materials can contaminate food with which they come into contact,migrate into food,and thus enter the human body.However,PFCs are very stable and difficult to metabolize and degrade,while possessing characteristics such as persistence,accumulation,and long-distance migration,which can accumulate and amplify in the food chain and accumulate in organisms,posing a threat to human health.This article summarizes the pre-treatment methods and detection techniques for PFCs in food contact materials both domestically and internationally in recent years,providing a certain reference for domestic research on detection techniques,risk assessment,and standard formulation and revision of PFCs in food contact materials.
