Wuyi rock-essence tea production technology is divided into a series of processes,such as withering,fine manipulation,enzyme inactivation,rolling,and drying.During the production process,it is necessary to flexibly control each process according to weather,fresh tea leaves,production place,tea tools,manual equipment,quality supervision and other conditions.Each process is interconnected,and only by mastering it properly can high quality Wuyi rockessence tea be formed.The article expounded the traditional manufacturing technology ofWuyi rock-essence tea,which is of great significance to its inheritance.At the same time,it provided a reference for in-depth understanding of Wuyi rock-essence tea production technique as a world-class and national intangible cultural heritage.
