机械化窖泥与人工窖泥对比研究

摘要 以陕西炎城环保机械有限公司机械化生产的窖泥与传统人工窖泥为研究对象,对其理化指标、微生物群落结构及基酒产质量进行研究。结果表明:机械化窖泥和人工窖泥的理化指标中水分、pH、氨态氮、有效磷含量无显著差异(P>0.05);机械化窖泥中有机质含量显著高于人工窖壁泥的50.70%(P<0.05),窖底泥的氨态氮、有效磷及有机质含量分别显著高于人工窖底泥的29.39%、23.41%、18.08%(P<0.05);不同的生产方式对窖泥微生物多样性和丰富度均产生了不同影响,且窖壁泥和窖底泥表现出不同的差异;机械化窖泥的基酒出酒率较人工窖泥提升了5.66%;基酒中酯类物质含量较人工窖泥提升了22.19%,且感官得分高于人工窖泥得分的4.35%。本研究对机械化窖泥生产参数的推广应用具有一定的指导意义。 The mechanized cellar mud produced by Shaanxi Yancheng Environmental Protection Machinery Co.,Ltd.and traditional artificial cellar mud were targeted.The physico-chemical indicators,microbial community structure,and quality of base liquor were studied.The results showed that there was no significant difference in the physico-chemical indicators of mechanized cellar mud and artificial cellar mud,such as water content,pH,ammonia nitrogen,and available phosphorus content(P>0.05).The organic matter content in mechanized cellar mud was significantly higher than that in artificial cellar mud by 50.70%(P<0.05),and the contents of ammonia nitrogen,available phosphorus,and organic matter in mud at cellar bottom were significantly higher than those in artificial mud at cellar bottom by 29.39%,23.41%,and 18.08%,respectively(P<0.05).Different production methods had different impacts on the microbial diversity and richness in cellar mud,where differences were also found in cellar wall and at bottom.The yield of base liquor produced by mechanized cellar mud increased by 5.66%compared to that by artificial cellar mud.The ester content in base liquor increased by 22.19%compared to that made by artificial cellar mud,and the sensory score was 4.35%higher than that made by artificial cellar mud.This study has certain guiding significance for the promotion and application of production parameters by mechanized cellar mud.
