肉苁蓉保健酒澄清工艺的研究

摘要 研究比较了活性炭、硅藻土、明胶、壳聚糖4种澄清剂对肉苁蓉保健酒的澄清沉淀作用。研究表明四种沉淀剂对肉苁蓉保健酒都有较好的澄清效果,又进一步研究四种沉淀剂对肉苁蓉保健酒活性成分的影响发现,活性炭、明胶、壳聚糖这三种澄清剂对肉苁蓉保健酒活性成分都有不同程度的损耗,硅藻土对肉苁蓉保健酒损耗较小,因此选择硅藻土作为肉苁蓉保健酒的澄清剂。实验对类似露酒的澄清提供了一定的参考。 The clarifying and precipitating effects of activated carbon,diatomite,gelatin and chitosan on Cistanche deserticola health wine were studied and compared.The research shows that the four precipitants have a good clarifying effect on Cistanche health wine.Further research on the effect of the four precipitants on the active ingredients of Cistanche health wine shows that the three clarifiers,activated carbon,gelatin and chitosan,have different degrees of loss on the active ingredients of Cistanche health wine.Diatomite has a small loss on Cistanche health wine.Therefore,diatomite is selected as the clarifier of Cistanche health wine.The experiment provides a reference for the clarification of similar dew wine.
