榴莲果实主要成分及分子标记研究进展

摘要 榴莲[Duriozibethinus(L.)Murr.]为木棉科热带常绿乔木,是东南亚最重要的水果之一,因其具有香甜浓郁的口感、强烈独特的气味而被称为“水果之王”。榴莲主要盛产于泰国、马来西亚、印度尼西亚、越南等东南亚国家,中国台湾、海南也有零星种植。文章综述了榴莲主要成分、挥发性香气及分子标记研究进展,旨在更全面地了解榴莲各部位的主要成分,为榴莲风味品质的研究及榴莲资源的综合开发和利用提供参考。 Durian[Durio zibethinus(L.)Murr.]is a tropical evergreen tree of the kapok family and one of the most vital fruits in Southeast Asia,it is known as the"King of Fruits"because of its sweet and rich taste and strong and unique smell.Durian mainly produced in Thailand,Malaysia,Indonesia,Vietnam,and other Southeast Asian countries,and there are also sporadic plantings in Taiwan and Hainan in China.This paper reviews the main components of Durian,the research progress of volatile aroma,and the research progress of durian molecular markers,aiming to understand the main components of each part of Durian more comprehensively and provide the basis for the research on the flavor quality of Durian,and the comprehensive development and utilization of durian resources.
