摘要
参考《食品安全国家标准食品中氨基酸的测定》(GB 5009.124-2016),对其方法改进后测定了大白桩菇子实体中17种水解氨基酸含量,并进行了方法学验证分析。结果表明,改进后的测定方法具有线性关系良好、结果准确、重现性好、回收率高的特点,可用作大白桩菇中17种水解氨基酸的测定。经测定,大白桩菇子实体含有17种水解氨基酸,总量为132.11 mg·g^(-1)。其中必需氨基酸占氨基酸总量的33.08%,药用氨基酸占氨基酸总量的67.28%,必需氨基酸指数为69.96,营养指数为34.36。可见大白桩菇是一种氨基酸分布均衡且营养价值较高的高蛋白食用菌。
With reference to the National Food Safty Standard-Determination of Amino Acids in Food(GB 5009.124-2016),the determination methods have been improved.Then 17 kinds of hydrolyzed amino acids in fruit body of Leucopaxillus giganteus were determined and the methodological verification analysis was carried out.The results showed that the improved method had good linear relationship,accurate results,good reproducibility and high recovery.So it could be used for the determination of 17 hydrolyzed amino acids in L.giganteus.According to the determination,there were 17 kinds of hydrolyzed amino acids in L.giganteus fruit body,which the total amount was 132.11 mg·g^(-1).The essential amino acids accounted for 33.08%of the total amino acids,the medicinal amino acids accounted for 67.28%of the total amino acids,the essential amino acid index was 69.96,and the nutritional index was 34.36.It is concluded that the L.giganteus is a kind of high-protein edible fungi with balanced amino acid distribution and high nutritional value.
