粮食真菌毒素快速检测产品性能评价与分析 被引量:3

摘要 真菌毒素污染是全球性粮食质量安全的首要问题,随着食品安全现场快速监管力度的不断加强,对快速检测方法的需求日益增长,许多真菌毒素快检产品应运而生。由于快速检测结果的准确性与快检产品质量和性能密切相关,因此选择市场占有率较高的5个真菌毒素快速检测品牌,采用科学的评价规程从检测结果可靠性、基质匹配性以及综合性能等方面对产品进行了多维评价。评价指标包括准确度、精密度、定量范围、检测结果判定范围、检测时间以及检测成本等,真菌毒素种类分别为脱氧雪腐镰刀菌烯醇、玉米赤霉烯酮和黄曲霉毒素B 1。评价结果显示,5个品牌的真菌毒素快速检测产品用于玉米、小麦和糙米基质中常见真菌毒素检测时的回收率在61%~178%之间,相对标准偏差在4%~38%之间,不同品牌间存在显著差异;各品牌产品的人员间检测结果相对标准偏差在0.4%~22.2%之间,部分品牌在检测某种粮食基质时易受到人员操作的影响;大部分品牌对不同粮食基质的匹配性良好。综合性能评价结果表明:5个品牌中品牌A的3种真菌毒素快检产品对粮食基质适用性最佳。 Mycotoxin contamination is the primary problem for grain quality and safety in the world.With the continuous strengthening of on-site rapid supervision for food safety,the demand for rapid detection methods is increasing,and many rapid detection products for mycotoxins have emerged.Since the accuracy of rapid detection results is closely related to the quality and performance of rapid detection products,five rapid detection brands for mycotoxins with high market share were selected,and scientific evaluation procedures were used to conduct the multidimensional evaluation of the products in terms of result reliability,matrix matching and comprehensive performance,etc.The evaluation indexes included accuracy,precision,quantitative range,determined range of detection results,detection time and detection cost,etc.The types of mycotoxins were deoxynivalenol,zearalenone and aflatoxin B 1,respectively.The evaluation results showed that the recovery rate of five brands of rapid detection products for mycotoxins used for the detection of common mycotoxins in corn,wheat and brown rice substrates ranged from 61%to 178%,and the relative standard deviation ranged from 4%to 38%.There were significant differences among different brands.The relative standard deviation(RSD)of testing results among personnel of products of various brands was between 0.4% and 22.2%.Some brands were susceptible to personnel operation when detecting a certain grain substrate,and most brands had good matching with different grain substrates.The results of comprehensive performance evaluation showed that the three rapid detection products for mycotoxins of brand A among the five brands had the best applicability to the above grain substrates.
