摘要
食品包装是食品研究的一个重要领域,其在保持食品品质方面发挥着重要作用。多糖作为重要的活性物质,因其天然无毒、可生物降解,且对二氧化碳和氧气具有选择渗透性,常被用作生物聚合物材料生产可食性膜,以减少传统塑料包装的污染。为进一步开发应用多糖基可食性膜,综述了多糖基天然聚合物的组成、多糖基膜的特性及其在食品保鲜中的应用,并对其发展前景进行了展望,为多糖基膜在保鲜技术的发展和产业化应用提供理论依据。
Food packaging is an important field of food research,which plays an important role in maintaining food quali⁃ty.As an important active substance,polysaccharides are often used as biopolymer materials to produce edible films to reduce the pollution of traditional plastic packaging due to their natural non-toxic,biodegradable and selective permea⁃bility to carbon dioxide and oxygen.In order to further develop and apply polysaccharide based edible films,this article summarizes the composition of polysaccharide based natural polymers,the characteristics of polysaccharide based films and their applications in food preservation,and looks forward to their development prospects,in ordor to providing a the⁃oretical basis for the development and industrial application of polysaccharide based films in fresh-keeping technology.
