植物乳和益生菌酸奶作为牛奶替代品的有效性评价

摘要 牛奶是目前用量较多的乳制品之一,富含钙、乳糖和其他营养物质,但是部分人存在乳糖不耐症等,无法饮用牛奶,为此市场上开发了多种乳制品来作为牛奶替代品。本文分析了植物乳和益生菌酸奶这两种乳糖替代品在解决乳糖不耐受问题方面的有效性。经过综合性评价发现,虽然益生菌酸奶存储条件要求高,但它在营养价值和生产条件上都优于植物乳,可以作为牛奶替代品进行推广。 Milk is one of the most used dairy products at present,rich in calcium,lactose and other nutrients,but some people are lactose intolerant,unable to drink milk,so a variety of dairy products have been developed in the market as milk substitutes.This paper analyzes the effectiveness of two lactose substitutes,vegetable milk and probiotic yogurt,in addressing lactose intolerance.Through comprehensive evaluation,it is found that although the storage conditions of probiotic yogurt are high,its nutritional value and production conditions are better than plant milk.It can be promoted as a substitute for milk.
