基于投影寻踪的面条品质感官评价数学模型的构建

摘要 针对面条品质感官评价常规过程中数据处理不够深入、评价结果不够清晰的问题,根据面条品质评价的行业标准,制定了面条品质感官评价等级表。运用投影寻踪等级评价模型(PPE),建立了面条品质感官评价的数学模型。该模型能够描述面条样本指标和等级之间的关系,具有精度高、灵敏性高、分辨率强、可重复性好等优点。根据15种市售面条样本的感官评价得分,应用面条品质感官评价的PPE模型,得到了各样本所属的等级。通过与感官评价总分的对比分析,两种方法均能反映实际情况,但采用PPE模型得到的面条等级更客观、更清晰,评价结果更易于解释,从而验证了模型的可行性和有效性,同时也说明了投影寻踪方法在面条品质评价领域的适用性,为面条品质等级评价提供了一种新的思路和方法。 The objective method for evaluation of noodles quality,which means the noodles performance indices measured by analysis equipment,was expected to replace the subjective evaluable index so far.But the true extent of these indices had received no substantive verification.Therefore,noodles sensory evaluation,which belongs to subjective method,was also the main method for evaluation of noodles quality.However,during the processing of sensory evaluable index score,summation or averaging cannot reflect the noodles quality characteristics either according to those indices,which will lead to serious?consequences such as poor data progressing and vague evaluation.Aiming at improving this situation,the present paper established a sensory evaluation grade of the noodles quality,according to the industry standard of noodles quality evaluation.Here,we applied a new method named projection pursuit method and projection pursuit grade evaluation model(PPE),which was used to process high dimensional data,and built a mathematical model of the noodles quality sensory evaluation.As a result,the average relative error of this mathematical model was only-0.01%,and the model can describe the relationship between noodles sample index and its grade,which exhibits several advantages,such as high precision,high sensitivity,strong resolution and good repeatability.To verify this model,15 noodles samples bought in the market were tested for the sensory evaluation index score,and then the noodles quality sensory evaluation PPE model was applied to get the grade of each sample.Comparatively analyzing the grade of PPE model and sensory evaluation total score,the two methods can both?reflect the actual situation of the noodles,but the result of noodles grade from PPE model was more objective,clear and easily explicable,which verified the feasibility?and effectiveness of the PPE model.In addition,the result of the experiment also illustrated the applicability of the projection pursuit method for the application of noodles quality evaluation,which provided a novel idea and method of noodles quality grade evaluation.
