褪黑素结合气调包装处理对黄牛肝菌保鲜效果影响 被引量:2

摘要 研究褪黑素(melatonin,MT)结合气调包装(modified atmosphere packaging,MAP)处理对贮藏期间黄牛肝菌(Boletus flavus)品质的影响。结果表明:褪黑素结合气调包装处理可将黄牛肝菌的贮藏时间从5 d延长到20 d,维持较好的营养品质,保持较高可溶性固形物含量,抑制可溶性蛋白分解为氨基酸,延长鲜味、甜味保存期;维持CAT、SOD活性使黄牛肝菌处于较低且平稳呼吸状态。在第20天时,褪黑素结合气调包装的MDA含量较低,维持较高POD、PAL活性,抑制PPO活性,从而控制褐变指数上升,促进酚类物质积累,提高抗氧化能力,延缓衰老。研究结果表明褪黑素结合气调包装处理对黄牛肝菌的抗氧化和保鲜效果较为显著。 The effects of melatonin(MT)combined with modified atmosphere packaging(MAP)on the quality of Boletus flavus during storage were studied.The results showed that melatonin combined with low-density polyethylene sheeting of P.B.I.Co.,Ltd.(TD)extended the storage time from 5 d to 20 d,while maintaining good nutritional quality.TD treated B.flavus fruiting bodies maintained a high content of soluble solides,and the soluble proteins were less prone to be decomposed into amino acids,resulting in a prolonged shelf life of umami and solids.The activities of CAT and SOD in TD treated B.flavus fruiting bodies were maintained to keep the fruiting bodies in a low and stable respiratory state.At day 20,TD treated B.flavus fruiting bodies showed a low MDA content,high POD and PAL activities,and low PPO activity.Therefore,the increase of browning index was controlled,the accumulation of phenolic compounds was promoted,the antioxidant capacity was increased,and the aging process was delayed.These results suggested that the combination of melatonin and MAP treatment has significant antioxidant and preservation effects on B.flavus.
