摘要
文章采用凯氏定氮法检测了市场出售的家养土鸡蛋及养鸡场的洋鸡蛋的蛋白质含量,并比较了两种鸡蛋中蛋清重量。结果表明,每毫升土鸡蛋和洋鸡蛋蛋清的质量无显著差异(P>0.05)。两种鸡蛋中蛋白质的含量对比为土鸡蛋>洋鸡蛋,土鸡蛋和洋鸡蛋中的蛋白质含量存在显著差异(P<0.05)。4种禽蛋中的蛋白质含量对比为鸽子蛋>鸭蛋>鹅蛋>鹌鹑蛋,并且土鸡蛋蛋白质含量比其他禽蛋中蛋白质含量都要高。
In this paper,Kjeldahl nitrogen determination method was used to detect the protein content of native eggs and foreign eggs from chicken farms,and the egg white weight of the two kinds of eggs was compared.The results showed that there was no significant difference in the quality of egg white per ml between native and foreign eggs(P>0.05).The protein content of the two kinds of eggs was higher than that of foreign eggs,and there were significant differences in protein content between native eggs and foreign eggs(P<0.05).The protein content of four kinds of poultry eggs was pigeon egg>duck egg>goose egg>quail egg,and the protein content of native eggs was higher than that of other poultry eggs.
