摘要
采集14家广西白酒小作坊30个白酒样品开展产品质量检验。结果发现,在质量指标方面,β-苯乙醇合格率100%、固形物合格率90%、总酸合格率63.3%、乳酸乙酯合格率43.3%、感官合格率30%、总酯合格率26.7%。由整体情况可见,广西白酒小作坊的产品质量水平堪忧。通过找出相应产品存在的主要质量问题,加以分析并提出改进对策,让白酒小作坊向着更为健康、有序的方向发展,为食品安全保驾护航。
About 30 liquor samples were collected from 14 Guangxi small liquor workshops for product quality inspection.The results showed that the qualified rate ofβ-phenyl ethanol,solid,total acid,ethyl lactate,sensory and total esters was 100%,90%,63.3%,43.3%,30%and 26.7%,respectively.The overall situation can be seen that Guangxi liquor small workshop product quality level is worrying.By finding out the main quality problems existing in the corresponding products,analyze and put forward the improvement countermeasures,so that the small liquor workshop towards a more healthy and orderly direction of development,escort for food safety.
