摘要
香精香料作为一种添加剂,具有增强产品香气、改善口味的作用,它的质量稳定性直接影响产品的最终质量。目前,质量控制手段多为感官评价等主观方法,存在操作复杂、主观单一等缺点。通过化学分析方法(GC-MS、HPLC-MS、光谱等)对香精香料复杂体系进行成分剖析,建立标准指纹图谱,并结合化学计量学方法分析样品间相似性,就可以客观的评价香精香料质量,进而实现产品质量控制。因此,本研究在香精香料相似度评价的基础上,总结了不同原理下指纹图谱相似度计算方法、优劣及适用性,并在最后对多维指纹图谱联合多元相似度计算在香精香料中的应用进行了展望,旨在为香精香料质量稳定性判断方法的选择提供有效参考。
Flavors and fragrances as an additive can enhance the aroma and improve the taste of the product.Their quality can directly affect final quality of the products.At present,the quality control methods are mostly subjective such as sensory evaluation,which has disadvantages such as complex operation and unidimensional subjectivity.Using chemical analysis methods(GC-MS,HPLC-MS,spectroscopy,etc.)to profile the composition of complex systems of flavors and fragrances,establish standard fingerprint profiles,and combine chemometric methods to analyze the similarity between samples,it is possible to objectively evaluate the quality of flavors and fragrances,and thus achieve product quality control.Therefore,based on the similarity evaluation of flavors and fragrances,the fingerprint similarity calculation methods were summarized with different principles,the advantages,disadvantages,and applicability in this study.With an outlook on the application of multidimensional fingerprint profiles combined with multivariate similarity calculation in flavors and fragrances,this paper aimed to provide an effective reference for the selection of quality stability judgment methods of flavor and fragrances.
