摘要
试验旨在优化超微粉碎辅助酶解法生产饲用膳食纤维的提取工艺。试验以小麦麸皮为原料,以小麦麸皮中水溶性膳食纤维的提取率为指标,进行单因素试验和正交试验。结果表明,在液料比20 mL/g、纤维素酶1.50 g/mL、酶解温度55℃、酶解时间24 h、水溶性膳食纤维的提取率24.32%的条件下,小麦麸皮的持水力为7.14 g/g,持油力3.29 g/g,膨胀力7.83 mL/g。小麦麸皮中水溶性膳食纤维对DPPH自由基和·O2-自由基的清除率分别为50.64%、37.78%。研究表明,超微粉碎辅助酶解法有效提高了小麦麸皮中水溶性膳食纤维的提取率。
The experiment was to optimize the extraction process of dietary fiber produced by ultrafine grinding assisted enzymatic hydrolysis.Wheat bran was used as the raw material and the extraction rate of water-soluble dietary fiber in wheat bran was used as index to carry out single factor experiment and orthogonal experiment.The results showed that under the conditions of liquid to solid ratio of 20 mL/g,cellulase concentration of 1.50 g/mL,enzymatic hydrolysis temperature of 55℃,and enzymatic hydrolysis time of 24 h,the water holding capacity of wheat bran of 7.14 g/g,oil holding capacity of 3.29 g/g,swelling capacity of 7.83 mL/g.The scavenging rates of DPPH free radicals and·O2-free radicals in wheat bran were 50.64%and 37.78%,respectively.The study indicates that ultrafine grinding assisted enzymatic hydrolysis effectively improves the extraction rate of water-soluble dietary fiber from wheat bran.
