摘要
选择不同产地的铁观音(茗科一号)、明前炒青绿茶、品茗桂香高山云雾绿茶三种茶叶作为研究对象,测定三种茶叶的燃烧热、燃烧稳定性、脂肪、粗纤维、灰分、微量元素。结果表明,3种茶叶燃烧热的顺序为:明前炒青绿茶>品茗桂香高山云雾绿茶>铁观音(茗科一号);燃烧稳定性排序为:品茗桂香高山云雾绿茶>铁观音(茗科一号)>明前炒青绿茶;脂肪含量(%)大小顺序为:品茗桂香高山云雾绿茶>铁观音(茗科一号)>明前炒青绿茶;灰分含量大小顺序为:明前炒青绿茶>铁观音(茗科一号)>品茗桂香高山云雾绿茶;粗纤维含量大小顺序为:品茗桂香高山云雾绿茶>明前炒青绿茶>铁观音(茗科一号)。燃烧热、燃烧性(茶叶的燃烧稳定性)、脂肪含量、灰分、粗纤维、微量元素含量多指标的顺序为:铁观音(茗科一号)>明前炒青绿茶>品茗桂香高山云雾绿茶。本研究建立3种茶叶的多指标分析及评价体系,为大规模开发茶叶资源以及茶叶分类研究提供有力的科学依据。
3 teas including Tie Guanyin(Mingke No.1),Traditional green tea and Alpine Cloud Green tea were selected as the research objects.The combustion heat,combustion stability,fat,ash,crude fiber and trace element contents for 3 teas were determined.The results showed that the order of combustion heat of the three teas was Tie Guanyin(Mingke No.1)>Traditional green tea>Alpine Cloud Green;the order of combustion stability was Alpine Cloud Green>Tie Guanyin(Mingke No.1)>Traditional green tea;the order of fat content(%)was Traditional green tea>Alpine Cloud Green>Tie Guanyin(Mingke No.1);the order of ash content was Tie Guanyin(Mingke No.1)>Traditional green tea>Alpine Cloud Green;the order of crude fiber content was Traditional green tea>Alpine Cloud Green>Tie Guanyin(Mingke No.1);the order of multiple indexes including combustion heat,combustibility(combustion stability of tea),fat content,ash,crude fiber,trace element contents was Tie Guanyin(Mingke No.1)>Traditional green tea>Alpine Cloud Green.In this study,the multi-index analysis and evaluation system for 3 teas established provided a strong scientific basis for the large-scale development of tea resources and the classification of tea.
